Well it is that time again! Menu Plan Monday! Last week went pretty well but we did stray a little. The older boys when to VBS last week during the evening so it made for early meals. Here is this week’s meal plan.
Monday: Bacon Egg and Cheese Biscuits – and before you think I am a super cooker, you should know that the biscuits are frozen! It makes the prep time so much quicker!
Tuesday: We are going to a concert to benefit A Home for A Hero. This is for a local soldier who lost both legs in Iraq and is friends with our family. We will eat there
Wednesday: Spicy Fried Chicken – Again, this is our little creation. We use equal amounts of red pepper, salt, garlic and black pepper. We put all of this an empty spice container and have affectionately called it ‘Pi Yow’. Sprinkle this on your chicken then dredge in an egg and milk mixture. Coat with flour and fry.
Thursday: Frozen Pizza! I am hosting a Creative Memories party that night and I do not want a lot of clean up.
Friday: Chicken Bow Tie Past – This is kind of our own creation. Here is how we make it. Cube your chicken and toss it on Italian Bread Crumbs. Either fry or sautee in olive oil. Once finished put all the chicken in a smooth pasta sauce (Ragu Old World Style works great). Then pair it with your favorite paste – ours is bow tie. Last time we made this we sauteed some broccoli in a little oil and added some garlic and wine seasoning. This was a great side and even tasted great mixed with the pasta.
Saturday: We will probably do something easy for breakfast like muffins. Silas’ 1st Birthday party is that morning at 1000a. For lunch we will most likely grab McDonald’s on the way home from the party. Dinner will be a steak or chicken stir fry.
Sunday: Breakfast will probable be something like omelets and biscuits. We will have tacos for lunch and eat the left overs as home made nachos for dinner.
